Acai Pastries Recipes You Can Try


Acai is not only meant for acai bowls - there are so many other foods you can make with acai, one of which is pastries. Here are some acai pastries recipes you can try:

This no bake blackberry and acai berry cake is vegan, gluten free, and refined sugar free. It contains layers of coconut, acai, blackberry, and jelly! 


Ingredients:

Base:

  • 4 (65g) pitted medjool dates
  • 1/2 cup (70g) almond
  • 1/2 cup (50g) gluten-free rolled oats

Coconut layer:

  • 3/4 cup full fat coconut milk
  • 1/4 cup dairy free yogurt
  • 1/2 tsp agar agar powder

Acai and blackberry layer:

  • 100g blackberries
  • 1/2 cup water
  • 1/4 cup dairy free yogurt
  • 1 cup full fat coconut milk
  • 3 tbsp maple syrup
  • 1 tbsp acai powder 
  • 1 tsp agar agar powder

Blackberry jelly:

  • 100g blackberries
  • 1/2 cup water
  • 3 tbsp maple syrup
  • 1/2 tsp agar agar powder

Instructions:

  1. Process base ingredients in a food processor. Transfer mixture into a pan (lined with parchment paper), pressing firmly into the bottom. Place pan into the freezer to set.
  2. Coconut layer: boil coconut milk in a saucepan. Then, add agar-agar and stir consistently until it completely dissolves. Lower heat and whisk in yogurt, simmering for 1 minute. Pour mixture over base and chill in the fridge.
  3. Acai layer: blend berries and water until smooth. Then, boil coconut milk and blackberry puree. Add agar agar, acai powder, stir consistently until they dissolve. Lower heat and whisk in yogurt and maple syrup, simmer for 1 minute. Pour mixture over coconut layer and chill in fridge to set. 
  4. Blackberry jelly: boil water and blackberries in a saucepan. Add agar agar, stir consistently until it dissolves. Lower heat and whisk in maple syrup, simmer for 1 minute. Pour mixture over blackberry layer and chill in fridge to set.

Never thought acai and cheesecake would go well together? Well, you can try with this quick and easy recipe. This no-bake acai berry cheesecake is quick and hassle-free to make. If you love cheese, you’ll definitely love this acai cheesecake combination as well!


Ingredients: 

  • ¼ salted margarine, melted
  • 1 cup graham cracker crumbs
  • 2 cups light cream cheese, room temperature
  • 1 lemon, juiced
  • ½ lemon zested
  • 150 ml condensed milk
  • 1 tbsp acai powder
  • 1 pomegranate, seeded
  • ½ cup organic cocoa nibs 

Instructions: 

  1. Preheat oven to 190 degrees. Mix melted margarine and graham crumbs together and place on a baking sheet. Bake for 5 to 8 minutes until nicely browned
  2. Add cream cheese, lemon juice, lennon zest and condensed milk in a mixer and blend until smooth and fluffy. Add acai powder and mix well. 
  3. Pour mixture over the cookie mixture. Sprinkle pomegranate seeds, cookie crumbs, and cocoa nibs on top. Refrigerate for at least 30 minutes or overnight. 

  • Raw acai brownies recipe

This raw acai brownies recipe is organic, vegan, gluten-free, and dairy-free. Rich chocolatey and acai taste - healthy and delicious! 

 

Ingredients: 

Base:

  • 1 pack acai pulp
  • ½ cup pitted dates
  • ½ cup walnuts
  • 6 tbsp cacao powder
  • ½ tsp vanilla
  • Pinch of himalayan sea salt 

Topping: 

  • ⅔ cup raw cashews
  • 3 tbsp maple syrup
  • ½ pack acai pulp
  • 2 tbsp melted coconut oil
  • Frozen mixed berries (optional)

 

Instructions:

  1. Base: process acai, dates, walnuts, cacao, vanilla, and salt in a food processor until smooth
  2. Lightly grease a baking pan with coconut oil or use parchment paper
  3. Transfer processed mixture into the pan and press firmly. Put mixture in fridge for 2 hours.
  4. Toppings: process raw cashews, maple syrup, acai, and coconut oil in a food processor. Add a pinch of salt and a handful of frozen mixed berries (optional). 
  5. Once the brownies become solid, add the toppings and refrigerate it for another hour.
