Choose a base that fits your service

Start with the bowl you want to sell and the preparation steps your team can repeat during a busy service. Ready-to-scoop sorbet and frozen pulp for blending create different workflows. Choose the format before buying equipment or setting a menu price.

PURE sorbetScoop a measured base, then add toppings.Freezer, scale and suitable scoop.
ZERO Sugar Added sorbetScoop a measured base, then add toppings.Freezer, scale and suitable scoop.
Pure & Unsweetened pulpBlend with your chosen fruit and a measured amount of liquid.Freezer, scale and a blender rated for the frozen ingredients in your recipe.

PURE sorbet contains added sugar. ZERO Sugar Added is sweetened with maltitol and sucralose. Pure & Unsweetened pulp is a separate unsweetened ingredient. Use the current ingredient, nutrition and allergen information for the recipe you intend to serve.

For a closer comparison, read açaí pulp versus açaí sorbet. The right choice depends on your intended recipe, preparation space and service routine.

Plan the equipment around the recipe

For scoop-and-serve bowls

  • Suitable frozen storage with space for your order.
  • A digital kitchen scale for consistent base portions.
  • A scoop or utensil suited to the sorbet.
  • Separate topping containers and utensils.
  • Bowls or takeaway cups, lids and spoons.
  • Cleaning supplies and a clear preparation area.

For blended pulp bowls

  • The same storage, portioning and serving setup.
  • A blender designed for your frozen ingredients.
  • Measured liquid and recipe ingredients.
  • A repeatable blending sequence.
  • Time and space to clean equipment between preparations.
  • A recipe trial in the cup or bowl you will actually sell.

You do not need a blender to serve a sorbet bowl. If you choose pulp, test your recipe on the equipment you plan to use and follow the manufacturer’s guidance. Blender capacity, texture and cleaning time will influence your service routine.

Build a repeatable bowl-making routine

  1. Prepare the station. Make sure the storage space, clean utensils and topping containers are ready before service.
  2. Weigh the base. Reset the scale with the empty serving bowl in place. Add your chosen amount of sorbet, or weigh the pulp and other ingredients for blending.
  3. Follow one recipe. Record the base weight, fruit, granola and drizzle amounts so different team members can prepare a comparable bowl.
  4. Finish to order. Add crunchy toppings near serving time and check the finished portion in your chosen packaging.
  5. Return stock to storage. Follow the product label and your business’s food-handling procedures. Keep allergen information and separate utensils in mind.

Run a preparation trial before adding the bowl to your main menu. Measure the actual time, ingredient use and handling losses in your own operation. This guide does not assume a particular service speed or equipment output.

Cost the complete bowl, then set your price

Smoof’s PURE 5L tub lists 4kg net sorbet. At 150g of base, the theoretical yield is 26 full bowls with 100g left over, before handling losses. At the current retail tub price of $47.95 SGD, that base portion costs about $1.80 SGD.

A retail example, not a wholesale quotation.

Your business cost should use the price, pack format and delivery terms in your confirmed wholesale quote. Use our wholesale enquiry page to discuss your order.

Add the other direct costs: fruit, granola, drizzles, cup or bowl, lid, spoon, delivery allocation and actual waste. Account for preparation labour, payment or platform fees and your operating overhead when deciding whether the menu price works for your café.

Base ingredient cost = quoted pack price ÷ net pack weight × base weight per bowl.

If you use pulp, calculate from the actual pulp weight and add every other ingredient in the blended recipe. The finished blended bowl’s total weight is different from the weight of the açaí ingredient alone. The 5L serving guide provides a starting table for sorbet portions.

Plan stock using your own sales pattern

Estimate daily base use from expected bowl sales and your chosen portion. For example, 20 bowls at 150g each require 3,000g of sorbet before handling losses. That is 75% of the listed 4kg net content of one PURE 5L tub.

Use that estimate to check freezer capacity and discuss replenishment. Once you have actual sales data, update the forecast for weekdays, weekends and events. Agree the available stock, delivery arrangements and ordering lead time with your supplier rather than assuming a fixed schedule.

Plan receiving so someone can check and put away the frozen order promptly. Keep product dates visible and follow the label and your business’s storage and food-handling procedures.

What to include in your wholesale enquiry

A clear enquiry helps Smoof understand the format and quantity you need. Include:

  • Your business name, outlet location and contact details.
  • The product or preparation method you are considering.
  • Your intended base weight and expected bowls per day or week.
  • Your preferred pack size and available freezer space.
  • Your expected first order quantity and target start date.
  • Any ingredient or allergen requirements relevant to your menu.

Ask for the current product specifications, available pack formats, pricing, minimum order requirements and delivery terms. These should be confirmed for your enquiry. You can start with the Smoof wholesale form and use the açaí product range to review the recipes.

Common questions from cafés

Can we serve açaí bowls without a blender?

Yes, if you choose ready-to-scoop sorbet. Weigh the sorbet base, add your toppings and serve. Frozen pulp requires a separate blending recipe and suitable equipment.

Does the 5L retail price apply to wholesale orders?

The retail price here is only a transparent costing example. Wholesale pricing, pack sizes, minimum quantities and delivery terms need to be confirmed in your quotation.

Can we describe every açaí bowl as unsweetened?

Use the ingredient information for the complete recipe. PURE sorbet has added sugar; ZERO Sugar Added contains sweeteners; Pure & Unsweetened pulp is an unsweetened base. Fruit, granola and drizzles can change the finished bowl’s composition.

How do we work out the actual yield?

Weigh your base portions and record how much product remains or is lost during a preparation trial. Use your measured yield for purchasing and costing rather than relying only on theoretical pack calculations.
